healthy choices

As much as I get days when I am totally in the mood for chocolate, cookies, or chocolate cookies, during summer there is nothing better than a fresh salad, after which you feel delighted and are proud of yourself for eating such a healthy bomb. The idea of this salad I got, ironically enough while shopping for accessories for graduation, don't really know why I thought of food at that moment, so I rushed to the bio store in the Hague right away and the result was this bowl of freshness

Fresh avocado/tofu salad with peanut/peach topping

one bowl of salad contains:

1/4 iceberg lettuce
1/4 cucumber
1/2 avocado in slices
100g tofu cubes
tablespoon of olive oil
pinch of seasalt

for the topping:

50g crushed peanuts
1/2 peach chopped in small pieces
2 teaspoons honey
2 tablespoons freshly squeezed lemon

The salad is very refreshing, full of healthy ingredients and the topping gave it a crunchy twist. Of course variations and modifications are possible according to own preferences. Hope someone will enjoy it s much as I did :)


  1. Is tofu a type of cheese? Cause I was thinking of it, and I wasn't sure if it was Tofu or another type of cheese. I wanted to do a salad and put that stuff in it.

  2. Yes indeed, tofu is a type of cheese, but made of soya, so not cheese in the real sense of the word, because they don't use any milk to make it :)
