the cheesy bites



I did not plan to cook anything last night, but when my mom came back from the store with the ingredients and said "we chould make some small bites", I was instantly hooked :) Now this recipe is prepared with ingredients typical for Bulgaria, but I am sure they can be properly substituted with other cheeses and spices.

Cheesy bites with savory

Ingredients (makes 48 balls or more):

1 cup Bulgarian yoghurt
1 small pack dry yeast
400g curds
200g Bulgarian white cheese
350g all purpose flour (I mixed white and multi-grain)
3 tablespoons savory
60g softened butter
3 tablespoons breadcrumbs
3 tablespoons sesame seeds
3 tablespoons flax seeds
2 tablespoons olive oil
1 tablespoon universal spices (Vegeta)

The dry yeast is dissolved in the yoghurt. Then in a large bowl we mix the yoghurt, curds, white cheese, flour, savory, universal spice, and butter until the dough is formed - it is quite sticky, but still stable enough to be formed into little balls. Then the dough is left 30mins aside to allow the yeast to act with the other ingredients. In a flat plate the breadcrumbs, sesame seeds and flax seeds are mixed, so that the cheesy balls can be rolled into that (a very yummy crust is formed that way). Then we start rolling the dough into small balls with equal size, we dip them into the breadcrumbs mixture and line on a baking tray with baking paper or olive oil on the bottom of the tray. Baking time: 15-20 minutes at 190C in a pre-heated oven. These bites are very light, very crispy and ideal for in-between, although I had them for dinner last night :D
