BANANA?! agaaaaaaaain :)

remember the banana muffins? not only do I love the minions, to some point I am getting obsessed with them, and I honestly think they deserve a movie as main characters. Since I am not an animator though, the only thing I can do is prepare some banana-minion-spirited sweets and bakes. This time I went for the double chocolate chip cookies with bananas (of course!), brazil nuts & white chocolate chips. They are crispy on the outside, soft on the inside and have to be eaten fast and kept a good eye on (because before you turn around twice in your kitchen, someone will have stolen them under your nose) :P


Banana/brazil nuts/white choc chip

Ingredients
(makes around 4 dozen)

2 cups all purpose flour
1 cup soft butter (into cubes)
1 cup crystal sugar
1/2 cup cocoa
100g banana yoghurt
2 eggs
2 tsp vanilla extract
1tsp baking powder
1/4 tsp salt
80g white choc chips (or white chocolate chopped)
80g chopped brazil nuts
3/4-1 banana cut into small pieces


to prepare the dough we start first by mixing the soft butter, sugar, eggs, the banana yoghurt & vanilla extract with a mixer until a smooth cream is formed. In another bowl the flour, baking powder, cocoa and salt are mixed well. The cream is then gradually added to the dry ingredients mixture until the brownishy dough is formed - it is not too soft, neither too hard (if you have doubts you can always add lil bit more yoghurt). In the end we sprinkle the white chocolate chips, brazil nuts and banana pieces and mix the dough well ( I still ended up with some cookies having more bananas than nuts)...

we then bake the cookies (initially one rounded teaspoonful) on baking paper lined in trays (we leave enough space between the cookies, since they grow double in size) in a preheated oven at 180C for 10-12-15 minutes until you decide they are done (these days I don't even have the slightest idea of degrees and time since I bake on a gas oven with two steps :D)


even my coffee beans are banana-fostered :)
