recipes through generations

I've always loved waking up from the smell of mouth-watering sweets or salties prepared by mom/grandma on a Saturday morning especially during vacation (now my vacation is quite lonegr than other times due to the fact of graduation and that I will finally join the world of work and summer vacations won't ever be so long). So, in order to enjoy this last vacation properly I was given the secret recipe of cheese rolls that has been going around the families on grandma's street for generations. The rolls turned out to be soo delicious and melting, I decided this recipe should be shared with the rest of the world, too :)


Cheese rolls

Ingredients
(makes 64 rolls)

1 cup grated yellow cheese
1 cup grated white cheese
1 cup plain yoghurt (+1 tablespoon baking soda)
250g margarine
3 cups sifted all-purpose flour
1 pack baking powder
seeds to sprinkle on the rollls


In a big bowl we mix the sifted flour, baking powder, yoghurt, margarine and cheeses. A uniform, soft dough is formed (it should not stick to fingers, if it does just add a little bit more flour). The dough is then divided into 8 smaller balls. They are put back in a bowl and refrigerated for at least 2 hours (it would be best if you prepare the dough in the evening and keep it in the frindge all night, so you prepare the rolls in the morning). Each one of the balls is then rolled out into circles and cut into 8 pieces. Baking trays are lined up with baking paper, oven is pre-heated to 190-200C. The pieces are rolled and then put with the end of the roll facing downwards (to prevent un-rolling while baking). You can sprinkle any seeds you want (sesame, poppy, flax) to make them more appealing. The rolls are baked for 10-13 minutes until deliciously red.
