healthy dinners #2: vegetable tartelettes

I like the days when I finish work early, come back home and still manage to prepare that recipe that has been roaming in my head during the day. This time I found myself tempted by the low-calories tartelette crust (remember the autumn tartelettes?) and some tasty spring stuff inside :)
basically you can throw anything in there, anything that you feel like eating - sweet or salty and here is what I put in mine:

Spring vegetable low-fat tartelettes

Ingredients

for the tartelletes crust (makes 8)
175g all purpose flour
1 tsp baking powder
25g cold butter in cubes
100g yoghurt
2 tbsp milk
1tsp brown sugar

for the filling
1 small green courgette
80g button mushrooms
50g kalamata olives
1/2 tsp thyme
splash of lemon plus small lemon cubes
50g niva cheese
cheddar cheese shavings

To prepare the dough crust we first mix the flour, baking powder, sugar, salt and butter. Then we rub with hands until a mixture of big and small crusts is formed. Yoghurt and milk are mixed in a small bowl and quickly added tot he dry ingredients. Now this is the moment where we have to be careful - the dough ball is formed quickly by stirring the ingredients into a ball quickly, without pressing too much. Then the dough is rolled on a generously floured surface and circles slightly larger than the diameter of the tartellete forms are cut with a round cookie cutter.

The forms are slightly greased, the dough is pressed to the walls and the newly formed baskets pierced with a fork a couple of times and are filled with rice, dried beans, dried peas or anything else that will prevent the dough from rising too much while baking. 

Baking takes place in two stages: the first one the crust is baked for 15 mins in a pre-heated at 175C oven.
Then the filling: cut all the vegetables and the olives and throw in a pan for 10mins or until the courgettes are softened and not watery any more. Sprinkle the thyme and lemon juice on top and stir one last time. Then the rice is take out of the crust baskets and they're filled with the vegetable mixture. We sprinkle blue cheese and cheddar cheese shavings on top, we can also put lemon cubes as well. Back in the oven for 10 more minutes so the cheese is melted...
