blueberries-white choc-vanilla muffins
even in summer, there is always time and place for a batch of fresh and fluffy muffins; beware, these are real fluffy, moist and delicious; the first step of course is to choose the basic ingredients and the muffin cases - this time I went for purple (only naturally) cuteness
Blueberry- white choc chips - vanilla muffins
Ingredients
(12-15 muffins)
1 1/2 cups all purpose flour (best sifted)
1 cup crystal sugar
1tsp baking powder
1/2 cup melted butter
1 egg
150g plain yoghurt + 50ml milk
200g fresh blueberries
75g white + 25g dark choc chips
1/2 tsp vanilla extract
5 easy steps:
- in a big bowl the dry ingredients are well mixed - flour + baking powder + sugar + the choc chips
- in another bowl the egg is beaten with the yogurt and the vanilla extract, the melted butter is added in the end
- in the centre of the dry ingredients mixture we pour the liquids and stir quickly (some small lumps might remain, but they will dissolve in the baking process); the milk is added if you decide the mixture is too dry
- blueberries are also quickly added and mixed in the dough
- the mixture is distributed in the muffin tray and muffins are baked at pre-heated at 180C oven for about 20min (or until puffy golden and a toothpick comes out clean)
the blueberries melt in the process, which just adds to the beautiful taste
extra tip: some lemon rind might be added to the dough as well, white chocolate and blueberries really would fit with the fine aroma of a freshly ground lemon rind
in the end even petite fraise was very curious about the result :)

ReplyDeleteI used to eat some Muffins from the ASDA supermarket but they were with raspberries and then there was raspberries with white chocolate OMG HEAVEN!
