BANANA?!


Getting back to animation movies... have you seen Despicable me? It's another extremely cute movie I loooove watching :) So, the minions there are my favourite characters and there is a great short movie issued shortly after the movie, called BANANA, where the minions are naturally fighting over a... banana :D Yesterday I watched it for like the 100th time and decided to make banana-movie inspired muffins. At the same time I could use the two newest muffin-baking trays - the baby muffin tray and another one that makes muffins look like little cakes :)

Banana/walnuts/white chocolate muffins



Ingredients
makes 6 big + 12 mini muffins


1 1/2 cup all purpose sifted flour
1/2 cup brown sugar
1/2 cup white sigar
2/3 tablespoon baking powder
1 large egg (beaten)
1/2 cup fresh milk
1/2 cup melted butter
1 banana
100g walnuts
85g white chocolate/choc chips



The flour is sifted and the baking powder is added; we mix together in a large bowl. Half of the sugar is added to the flour, the other half will go into the "wet" ingredients mixture. In another bowl the egg is beaten, the milk is added together with the rest of the sugar and beaten till a light uniform cream is formed; the melted butter is added as well. This mixture is then added to the flour and the dough is formed. Finally we add chopped banana pieces (which give great aroma and contribute greatly to the taste), chopped walnuts and the white chocolate chips. The batter is mixed well so that banana/walnut/choc pieces are everywhere. Oven is preheated to 200C (I did this because the trays were silicone). Baking time for the mini muffins: 10-12 mins; the big muffins: 20mins.
