apricots and crunchyness

since apricot season is coming, this is one spur of the moment recipe that is super quick and easy and basically can be replaced with any other layers of ingredients, but my preference for crunchy toppings lead me to choose biscuits and freshly toasted almonds

Ingredients
4 portions

8 digestive biscuits
100g heavy cream
2 tbsp powder sugar
200g ricotta cheese
200g apricots
handful freshly toasted almonds
handful choc chips
* first the 100 ml of cream are beaten with a hand mixer together with the sugar until thick; then the ricotta is incorporated slowly until the cream is smooth; biscuits and toasted almonds are chopped, the apricots - cut into small pieces
* we start with a layer of biscuits, cream/ricotta, apricots, cream/ricotta again and we finish off with almonds and choc chips
* the glasses are left in the fridge to cool off for a couple of hours
and that's it :)
the recipe is really that easy and rewarding :)
